Sweet Lemon Ice Cream

Just a couple of years ago, cough cough, when I was in middle school and high school our family would go to this cute little ice cream parlor called Delsa’s. It was super old school and deeeeelish. I always, literally, always got the lemon custard. It was light and sweet. Heavenly. I started making my own version a few years back and it is the spittin’ image of the Delsa version, minus the eggs. SUPER simple to make. Even easier to eat.

1 cup whole cream
2 cups fat free milk
3/4 cup sugar
2 tsp lemon extract
yellow food coloring

Toss all ingredients in your ice cream maker. Go do something important. Come back and voila! I like to freeze my ice cream for 3-4 hours before “serving” to harden up. Key word is serving. That’s because I always eat a bowl myself right of the bat. You just need to make sure it’s “safe” to eat before you go “serving” everyone else.
