Pucker Up Peaches

One of my top 3 favorite things about summer is the fruit. Mmmmmm. Last week I had a friend over for dessert. Yes, just dessert. It was quite nice for me, probably not so much for her since my dog had to french kiss her 11 times, while she was standing upright. te he he.

1/2 cup fresh squeezed lemon juice
1 cup granulated sugar
4 lg eggs
1 lg egg yolk
12 tb unsalted butter cut into 16 pieces

Place sugar in medium bowl and grate zest of one lemon into it. Rub zest and sugar between palms of hands.
Strain lemon juice into medium saucepan and add eggs, yolk, butter and zested sugar. Whisk to combine. Set on med heat and cook whisking constantly for 3-5 minutes until it begins to thicken.
At first sign of a boil, remove from heat and chill for 30 minutes or until set.

1/2 pint heavy whipping cream
1 cup powdered sugar

Pour whipping cream and powdered sugar into a bowl and whip until stiff peaks form.

4 large peaches (halved and cored)

Pre-heat bbq grill to med/low. Place peaches on grill and cook for about 5-10 minutes until tender but not mushy.

To serve, place peach halves in bowl, add a couple spoonfuls of lemon curd  and finish with a dollop of whipped cream.

Terri Martin - All I can say is “Yum”. :) And your dog is a good kisser.

Talia - I’d be quite happy to live on a diet of ‘just dessert’ if i could! and this looks great, I love grilled peaches – we sometimes do them with a yoghurt sauce, which, if i were going to eat nothing but dessert ever again might be a good idea, thought the cream sounds tastier and very decadent!
