Lime Butter Snowbars

These are an old family favorite of ours…except we traditionally do the lemon version. I made these for St. Patty’s day this year so I decided to switch it up a bit for spirit. Thus, lime. To be perfectly honest, I couldn’t tell much of a difference between lemon and lime but this is for sure…they were divine. Chewy and gooey.

Crust:

1/2 cup butter – softened

1/4 cup sugar

1 1/3 cup flour

  1. Pre-heat oven to 350
  2. Mix crust ingredients together
  3. Press into 9X9 ungreased pan
  4. Bake at 350 for 20 minutes or until edges are light brown

Filling:

2 eggs

2 tbsp flour

3/4 cup sugar

1/4 tsp baking powder

3 tbsp fresh squeezed lime juice

Zest from 2 limes

A few drops of green food coloring if you choose

  1. Mix ingredients together and pour over the top of the crust
  2. Bake at 350 for 20 minutes
  3. Sprinkle with powdered sugar
  4. Once cooled, cut and enjoy
